Join Michelin-starred Chef Guillaume Bracaval for an inaugural menu that promises to surprise and delight the palate. Inspired by a deep respect for the Japanese terroir, Chef Guillaume crafts contemporary French cuisine with the finest seasonal ingredients from across the country. 

The first edition of est’s ‘terroir’ degustation menu takes diners on an artfully-composed journey, designed around superb flavours: think umami-packed Zuwaigani crab, bright citrus from Wakayama, homemade tofu cheeses and hearty Jerusalem artichokes. Elegant desserts from Pastry Chef Michele Abbatemarco offer the perfect sweet finish. 

The ‘terroir’ menu is available for lunch (10 courses, 18,000 yen ++) and dinner (11 courses, 30,000 yen ++). Add wine pairing, curated by Chief Sommelier Yuta Yoshida, for 15,000 yen ++
